Holiday Bite-Sized Treats: Ways to Utilize Christmas Leftovers into NYE Appetizers

Party snacks doesn't have to be fancy, so New Year's offers a great chance to use up what's left. The key rule is to keep things to just one bite—guests don't want to handle a fork. Guests are looking for a big hug of hearty fare with a luxurious touch.
If you have a bit of cured fish left, place it on blinis and crown it with affordable roe. Small patties are also just the ticket: If you have remaining fish or hot smoked salmon, fold it through mashed potato, combine with dill, lemon, and caramelized onions, then coat in panko and deep-fry.
You could also get creative with croquetas. Prepare the white sauce a few days ahead, then use remaining pork, poultry, or mushrooms for the interior. Whizz stale bread into breadcrumbs to cover them, then fry. Sausage roll mixtures are another natural home for those breadcrumbs, or use them as a jacket for chicken pieces. Seasoning-wise, just add a bit of citrus zest and aromatic herbs, and they'll taste so much more. As an aside, croissants make excellent coatings, too.
One favourite thing at this time of year is a leftovers sandwich, and that can continue after Boxing Day. Place some holiday meats in an sealed tub and store in the freezer. While you're at it, reserve some berry relish and sweet glaze in the refrigerator. When needed, defrost the meat, then pop it in a hot oven with the reserved glaze for a brief period. Cool and slice thinly, then arrange on top of some artisan bread and assemble mini sandwiches with lots of cranberry sauce. Cut into bite-sized pieces for a surefire hit.
Remaining poultry, meanwhile, could be transformed into a zingy salad. There’s always a bit of turkey leg left over, and it's perfect for something punchy. Shred the meat, then fry it slowly in a pan, and toss with remaining sauce loosened with citrus juice, a dash of soy and a little spicy oil. Garnish with fresh herbs and some green onions, and serve in small lettuce cups.
Revamping Leftover Vegetables
Vegetables, meanwhile, can be scrubbed up and ready to party with a big batch of bubble and squeak. Combine all your leftover veg with fresh herbs, then season and incorporate flour. Cut out portions to roughly the size of blinis, then store in the freezer. Reheat in a hot oven for a few minutes and top with whatever you like—perhaps sliced beef and grated horseradish. A word to the wise, though: set some aside for a late breakfast the next day.
